We select high-quality wheat flour from the center plain of China. We also introduce an intricate fermentation process, and slowly dry the dough in a high-temperature and high-humidity environment which is a unique technique of Huiyun. In addition to nine other techniques, such as grinding and pressing, come from the time-honored tradition of Dongchuan noodle making. How to cook: Put about 120 grams of noodles into about 1.5 liters of boiling water, cover the lid. When the water boils again, remove the lid and cook it on medium firepower for 2-3 minutes until you can break the noodle easily. Mix the noodles and serve it with your favorite seasoning.
